 St. Gregory's Casserole Recipes
Here are some recipes that you could make for the people who eat at  St. Gregory's. Buy a big mixing bowl, make double and feed your family too! 

Cavatini (10 servings)
1 lb. ground beef
1 lb. mild pork sausage
1 medium onion, chopped
1 green pepper, chopped
1 28 oz. can crushed tomatoes
1 26.5 oz can spaghetti sauce
1 16 oz. jar mild salsa
1 4oz. can sliced mushrooms, drained
1 package shell macaroni, cooked
1 cup grated parmesan cheese
4 cups shredded mozzarella cheese

Cook the ground beef, sausage, onion and pepper in a large skillet over medium heat, stirring until meat browns and crumbles. Drain well. 

Combine the tomatoes, sauce, salsa and mushrooms in a large bowl; stir in meat mixture and cooked pasta. Spoon half of mixture into baked pans, sprinkle with half of parmesan and mozzarella cheeses. Top with remaining pasta mixture and cheese. 

Freeze or bake at 350 degrees for 30 minutes or until heated through. 

Sausage and Noodle Casserole (10 servings)
2lbs. mild ground pork sausage
2 cans cream of chicken soup (undiluted)
1 lb (16oz) container of sour cream
1/2 cup blue cheese, crumbled
(2) 4.5 oz jars sliced mushrooms, drained
(2) 4 oz jars diced pimiento, drained
2 chopped green peppers
1 cup soft breadcrumbs
1 lb. package egg noodles, cooked
2 T. butter

Brown sausage in a large skillet until it crumbles. Drain and set aside.

Combine soup, sour cream, and blue cheese in a large saucepan, cook over medium heat, stirring constantly until cheese melts. 

Add cooked noodles, sausage, mushrooms, pimento and bell peppers, and spoon into casserole dish. 

Combine breadcrumbs and sprinkle over casserole. Dot with butter.

Freeze or bake at 350 degrees for 30 minutes or until heated through.

Zucchini/Meat Casserole (10 servings)
2 lbs. ground beef or turkey
1 cup chopped onion
3 cloved garlic, minced
(2) 28oz cans of crushed tomatoes
2 tsp. dried oregano
2 to 3 cups sliced zucchini
16 oz. egg noodles, cooked
2 cups shredded cheddar cheese

Brown meat with onion and garlic and drain.

Mix tomatoes with oregano in large pan, simmer for 10 minutes, add drained meat mixture.

Mix in sliced zucchini and cook for an additional 10 minutes.

Blend in cooked noodles.

Layer half of meat/noodle mixture and half of cheese. Repeat layers.

Freeze or cook at 350 degrees until heated through.

Stroganoff Casserole (10 servings)
1 lb. cooked egg noodles
1 lb. lean ground beef 
1 onion, chopped
1 green pepper, chopped
2 ribs celery, chopped
1/2 cup red wine
6oz can tomato paste
4oz. can sliced mushrooms, drained
1 t. dried oregano
8oz. container sour cream
12oz. container small curd cottage cheese
2 cloves chopped garlic
2 cups or 8 oz  shredded mozzarella cheese
1/2 cup grated parmesan

Cook ground beef until it is brown and crumbles. Drain and return to skillet. Stir in onion, bell pepper, garlic and celery.

Cook, covered over medium high heat 15 minutes or until vegetables are tender. Stir in wine, tomato paste, mushrooms and oregano, set aside.

Stir together sour cream and cottage cheese. Add noodles, tossing to coat. 

Spread half of the noodle mixture into a baking dish. Top with half meat mixture, 1 cup mozzarella and 1/4 cup parmesan. Repeat with remaining noodle and meat mixture.

Freeze or bake at 350 degrees until heated through.
